ZUCCHINI - PRUNE BREAD 
3 eggs
1 c. oil
2 c. sugar
2 c. grated zucchini squash
2 tsp. vanilla
1/2 c. chopped prunes or dates, uncooked
3 c. all-purpose flour
3 tsp. cinnamon
1 tsp. baking soda
1/4 tsp. salt
1/2 c. chopped nuts

Beat eggs until foamy. Add oil, sugar, zucchini and vanilla. Mix well. Bake at 325 degrees for 1 hour.
