PRUNE-BANANA BREAD 
1/3 c. butter
1 c. sugar
1/2 c. egg substitute or 4 egg whites
1 c. mashed bananas
1 2/3 c. all purpose flour
1/3 c. oat bran
1 tsp. baking soda
1 tsp. vanilla extract
1/2 c. chopped, pitted prunes

Preheat oven to 350 degrees. Grease a 9"x5" loaf pan; set aside. In a mixer bowl beat together butter and sugar. Beat in egg substitute or egg whites and mashed bananas. Gradually mix in flour, oat bran and baking soda. Stir in vanilla extract and prunes. Spoon batter into prepared loaf pan. Bake about 1 hour or until a wooden pick inserted in center comes out clean. Let cool 10 minutes before slicing. Makes 1 loaf.
