“TWICE BAKED ACORN SQUASH” IS IN:

TWICE BAKED ACORN SQUASH 
2 to 4 acorn squash (depending on how many people your feeding)
black beans
shredded cheese
butter
green onions, chopped
microwave safe dish
enough water to cover squash

Scrub acorn squash and cut in half. Scoop out seeds. Poke small holes in squash. Place water in microwave safe dish and place squash in dish flesh side down in water. Place in microwave and cook until done.

Take out of microwave and carefully scoop out pulp and put pulp in bowl with rinsed black beans, butter and green onions, and cheese (dump water out of dish). Place back into shells and put remainder cheese on top and place back into the dish and microwave. Cook until cheese melts. Take out of microwave and enjoy.
