BROCCOLI BEEF SQUARES 
2 c. frozen chopped broccoli, thawed (if raw, cook 5 minutes and drain)
1 lg. ground beef
1 (4 oz.) can mushrooms, drained
2 c. shredded cheddar cheese
1/3 c. chopped onion
2 c. packed biscuit mix
1/2 c. cold water
1/4 c. grated Parmesan cheese
1 tsp. salt
4 eggs
Dash of pepper

Cook and stir beef in skillet until brown; drain. Stir in mushrooms, 1 1/2 cups of the cheddar cheese and onion.

Mix baking mix, water and remaining cheese until soft dough forms. Pat dough into a 13x9-inch pan with floured hands, pressing 1/2-inch up sides. Spread beef mixture over dough; sprinkle with broccoli.

Mix remaining ingredients and pour over broccoli. Bake until knife inserted near center comes out clean, 25-30 minutes at 350 degrees. Serve with tossed salad.
