BEEF AND CHEESE SQUARES 
Ground beef in a Stroganoff-like mixture bakes over a crisp crust, with a topping of cheese. For 4 to 6 servings you will need:

1 lb. lean ground beef
1/2 c. chopped onion
1 tsp. salt
1/8 tsp. pepper
1 c. sliced fresh mushrooms
1 tbsp. all-purpose flour
1/2 c. commercial sour cream
Quick pastry (recipe follows)
6 slices mild Cheddar cheese

1. In large frying pan, brown beef with the onion, salt and pepper. Drain.

2. Stir in the mushrooms and flour. Bring to a boil. Cook until thickened. Stir in the sour cream.

3. Prepare pastry. Press over bottom and sides of a 9 inch square pan, building sides up about 1 inch.

4. Spoon hot meat mixture into crust. Top with cheese slices.

5. Bake at 375 degrees for 20-25 minutes until golden brown. Serve hot.

Quick Pastry: In a bowl, mix 1 cup all-purpose flour with 1 teaspoon baking powder and 1/4 teaspoon salt. Cut in 1/3 cup vegetable shortening until mixture is crumbly. Stir in 4-6 tablespoons milk until dough holds together.

Good served with: Sliced tomatoes topped with green onions, tossed spinach salad. For 2 servings: It is not practical to try to make 2 servings of this dish. Prepare above quantities. Wrap extra servings individually in plastic wrap. Reheat to serve. For 8 servings: Double the ingredients. Bake in a 13 x 9 inch pan. Bake time will be about 5 minutes longer.
