BROCCOLI-BEEF SQUARES 
2 c. chopped fresh broccoli
1 (4 oz.) can mushroom stems & pieces, drained
1/3 c. chopped onion
2 c. buttermilk baking mix
1/4 c. grated Parmesan cheese
Dash of pepper
1 lb. ground beef
2 c. shredded cheddar cheese
1/2 c. cold water
1 tsp. salt
1/2 c. milk
2 eggs

Heat 1" salted water (1/2 teaspoon salt to 1 cup water) to boiling. Add broccoli. Cover and heat to boiling. Cook until almost tender, about 5 minutes; drain thoroughly.

Cook and stir ground beef in 10" skillet until brown; drain. Stir in mushrooms 1 1/2 cups of the cheddar cheese and the onion. Mix baking mix, water and the remaining cheese until soft dough forms; beat vigorously 20 strokes. Pat dough in greased 13"x9"x2" baking dish with floured hands, pressing dough 1/2" up sides. Spread beef mixture over dough; sprinkle with broccoli. Mix remaining ingredients; pour over broccoli. Cook, uncovered in 400 degree oven until golden brown and knife inserted near center comes out clean, 25 to 30 minutes.
