STUFFED CRABS 
6 med. lg. steamed crabs
2 tbsp. crushed garlic
1/2 c. chopped onion
1 med. size tomato, chopped
2 eggs, separated
1 tsp. salt
White pepper
3 tbsp. cooking oil (any light oil, such as safflower or soybean)

Remove the meat of the crabs from the shell set aside shells, sauteed garlic, onion, tomatoes and crabmeat mixture. Beat egg whites 8 to 10 minutes until stiff. Add the yolks, salt and pepper and beat 3 minutes. Place about a tablespoon of egg over stuff crab. Fry in hot oil in pan for 5 minutes on each side, or until brown.
