CHEESY CRAB STUFFED POTATOES 
4 med. baking potatoes
Vegetable oil
1 c. (4 oz.) shredded cheddar cheese
1/2 c. butter, melted
1/2 c. half & half
1/4 c. diced onion
1/2 tsp. salt
1/4 tsp. ground red pepper
1 (6 oz.) can crab meat, drained, flaked & chopped
Paprika

Wash and scrub potatoes and rub with oil. Bake at 400 degrees for 1 hour. Allow to cool. Cut in half lengthwise; scoop out pulp, leaving shells intact. Place pulp in mixing bowl and add remaining ingredients except paprika. Mash with potato masher. Stuff shells with mixture, sprinkle with paprika. Bake at 425 degrees for 15 to 20 minutes.
