LEMON FLOUNDER STUFFED WITH CRAB | |
CRABMEAT STUFFING: Saute 2 tablespoons each of butter, minced onion, green pepper, and celery. Add to this mixture 1 (6 oz.) can crabmeat, 1 teaspoon lite salt and pepper, 1 teaspoon sage, 2 slices high fiber low calorie wheat bread, crumbled, and 1 beaten egg. Cut "pockets" in 6 flounder fillets and stuff with crabmeat mixture. Brush with 2 tablespoons butter and 2 tablespoons lemon juice. Sprinkle with lite salt, pepper and paprika. Bake at 350 degrees for about 20 minutes. 6 servings. |
