ZUCCHINI CASSEROLE 
2 lbs. zucchini
1/4 c. chopped onions
1 c. shredded carrots
1 can cream of mushroom soup (undiluted)
1 c. sour cream or yogurt
1 (8 oz.) pkg. seasoned stuffing mix
1/2 c. melted butter
1/4 c. grated Parmesan cheese
1 lb. sausage

Brown sausage. Put on paper towel to drain; set aside. Cook sliced zucchini and chopped onions in salted water for 5 minutes. Drain. Combine soup and sour cream. Fold in drained zucchini mix and carrots.

Combine stuffing mix on bottom of 12 x 7 1/2 inch baking dish. Add sausage. Spoon vegetables over top of stuffing and sausage. Sprinkle cheese over vegetables. Top with remaining stuffing. Bake at 350 degrees for 25-30 minutes until heated thoroughly.
