POSSUM PIE 
30 crushed Ritz crackers
3 egg whites, beaten stiff
1 tsp. vanilla
1 c. plus 2 tbsp. sugar
3/4 c. chopped pecans
1/2 pt. whipping cream
1 pkg. frozen coconut

Mix crackers, nuts and 1 cup sugar. Fold in egg whites. Mix thoroughly and add vanilla.

Pour in greased pie plate. Bake for 25 minutes at 325 degrees. Cool completely.

Whip cream and add 2 tablespoons sugar. Cover pie and sprinkle with coconut.

Chill 6 hours or overnight.
