CHICKEN IN FOIL, ITALIAN STYLE 
2 meaty chicken pieces (legs, thighs, breasts)
1/4 tsp. salt
1 med. potato, pared
Salt
1 med. zucchini
3 lg. pitted ripe olives
2 tbsp. tomato sauce
1/2 tsp. oregano leaves
1 tbsp. butter

Sprinkle chicken with 1/4 teaspoon salt. Cut potato lengthwise 1/8 inch slices. Cut zucchini into 1/4 inch slices. Layer potatoes, salt, zucchini, and salt on 18 inch piece of foil, top with chicken, olives, tomato sauce and oregano, dot with butter. Wrap securely. Grill 5 inch from medium coals. Cook 25 to 30 minutes on each side. Serve with corn on the cob and tomatoes. Makes 1 serving.
