AZTEC QUICHE 
1 (9") deep dish frozen pie shell
1 1/2 c. Monterey Jack cheese, grated
1 c. mild cheddar cheese, grated
4 oz. can diced green chilies
1 c. half and half
3 eggs, beaten lightly
1/2 tsp. salt
1/8 tsp. cumin

Spread Monterey Jack cheese and half of the cheddar over the bottom of the pie shell. Sprinkle diced chilies over the cheeses. Combine the half and half, eggs and seasonings. Pour carefully into pie shell. Top with remaining cheddar. Bake at 325 degrees for 40 to 50 minutes.
