PEPPER JELLY 
3/4 c. ground sweet pepper
1/4 c. ground hot pepper (3 jalapenos)
6 c. sugar
1 1/2 c. white vinegar
6 oz. Certo
Red or green food coloring, optional

Combine peppers, sugar and vinegar in large saucepan. Place on high heat, stirring until mixture comes to boil. Boil for 1 minute, stirring constantly. Remove from heat and add Certo. let stand for 5 minutes. Skim off foam with metal spoon, and pour quickly into 1/2 pint jelly glasses. Seal with paraffin or lids. Try this with cream cheese on Ritz crackers.
