KATE'S BAKED CHICKEN 
1 3-4lb whole chicken
1 med sweet onion
1 large shallot
1 package of bella mushrooms chopped
1 whole clove garlic (minced)
8 tablespoons of butter
2 chicken flavored bouillon cubes

Sauté the shallots, finely chopped onion, mushrooms and garlic in a pan with 4 tablespoons of butter and one bouillon cube until soft. Take off heat and let cool. Prepare your chicken in a 13x9-inch baking pan.

When cool, place the mixture under the skin of your chicken on the breasts and legs, add 2 tablespoons of butter cut into pieces to brown the skin.

Add about 1/3 cup water, the remaining bouillon cube and butter to the pan surrounding the chicken.

Bake in a preheated 350°F oven for about 90 minutes or until done, basting frequently.
