HARVEST BREAD 
1 1/2 c. finely chopped apples (fresh or dried)
1/2 c. butter, softened
2/3 c. sugar
2 eggs, beaten
2 c. all purpose flour
1 tsp. baking soda
1/2 tsp. salt
3/4 c. shredded cheddar cheese
1/2 c. chopped walnuts

Cook apples according to package directions or until fork tender; drain well and set aside. Cream butter and sugar until light and fluffy; add eggs, beating well. Combine flour, soda and salt; add to creamed mixture. Stir in apples, cheese, and nuts. Pour into greased 9 inch loaf pan. Bake at 350 degrees for 50 to 55 minutes. Cool 10 minutes in pan. Remove from pan and finish cooling on rack.
