SEAMAN'S DELIGHT | |
This is a per person recipe. Multiply it by number of persons you plan to serve. 1 ear of corn on the cob 1 med. tomato 1 yam or sweet potato You will also need: Seasoned bread crumbs Charcoal for grill Corn: soak in husk 15 minutes in fresh or salt water. Tomato: remove top and scoop out 1/2 of inside, dice and mix with seasoned bread crumbs, diced Mozzarella cheese (or your choice), onion, and salt and pepper to taste. Return mixture to tomato shell and wrap in aluminum foil. Yam: wrap in aluminum foil (if desired), coat with butter first. Over medium fire, place corn with husk on grill and rotate 1/4 turn every 8 to 10 minutes. Place yams on grill and turn occasionally. After 20 minutes, add tomatoes. After 10 minutes more, place whole lobster on grill. (Stand guard to prevent them from jumping off and returning to the deep.) Lobster is ready when shell becomes deep red (about 10 to 12 minutes). Open your favorite wine and enjoy. May be prepared at home. |
