3 plantains 2 cloves garlic 4 c. water 2 tbsp. salt Peel plantains and cut in diagonal slices about 1" thick. Add plantains, garlic, and salt to water for 15 minutes. Remove plantains from water and drain thoroughly on paper towels. Deep fry in oil at 350 degrees for 5 to 7 minutes. Remove from skillet and place on paper towels. Fold paper towel over the plantain and press it slightly with the palm of your hand. If you have some difficulty with the plantain sticking to the paper towel, you may substitute wax paper. After pressing all the plantains, quickly place in hot oil, 375 degrees and fry until crisp and golden. Drain on paper towels and sprinkle with garlic salt. |
