HACIENDA CHICKEN | |
2 tbsp. butter 1/2 c. chopped onion 1/2 c. chopped green pepper 1 (No. 2) can tomatoes (2 1/2 c.) 1 (2 1/2 oz.) can sliced mushrooms, drained 1 tsp. parsley flakes 1 tsp. paprika 1 1/2 tsp. salt 1/4 tsp. pepper 1 c. long grain rice, uncooked 2 lbs. meat, cubed (use chicken, beef or pork) Brown off chicken, take out of skillet. Saute onion and green pepper in skillet over medium heat until onion yellows. Add all remaining ingredients except rice, cover and bring to boil, lower temperature and simmer 10 minutes. Stir in rice and arrange in casserole dish with meat on top. Cover and bake at 350 degrees for 45 minutes. |
