MOLASSES BREAD 
1 tbsp. (1 pkg.) yeast
1 1/4 c. warm water
1 c. warm milk
2 tbsp. oil
3 tbsp. molasses
2 tsp. salt
5-6 c. flour

Proof yeast in warm water with molasses. Add remaining ingredients and enough flour to make dough manageable. Turn out onto floured surface and knead, using additional flour as needed, for about 5 to 8 minutes. Return to bowl, cover with damp towel and let rise for about an hour.

Punch dough down (punch really means PUNCH--get all the air out) and shape into 2 loaves. Place in greased loaf pans and let rise about 45 minutes. Bake at 375 degrees for 40 minutes or so. Remove loaf from pan and tap bottom with your knuckles. If it sounds hollow, bread is done. If not, return to oven for 5 minutes or so. Cool on wire racks.
