PECAN ICE BOX COOKIES 
1 stick butter
1 1/2 c. brown sugar
1 egg
2 1/2 c. flour
1/2 tsp. baking soda
1/2 tsp. salt
1 tsp. vanilla
1 c. finely chopped pecans

Cream the butter and sugar. Add the egg and beat well. Slowly add sifted dry ingredients, vanilla and chopped pecans. Form into two rolls and chill several hours. Slice rolls 1/8" thick and bake on an ungreased cookie sheet for 12 minutes at 350 degrees.

This is the recipe I have always used for these cookies and the one my mother prepared when I was growing up. I have seen a lot of recipes that are the same but have more flour, up to 4 cups. The cookies from this recipe are perfection and I would never use more flour than in this recipe.

Made these today. Nice that it's a smaller batch. Wasn't exactly the one I was looking for but they are very good and very easy to make! Try them!
