PECAN ICE BOX COOKIES 
1 c. light or dark brown sugar
1 c. granulated sugar
1 c. pecans
1 c. butter
1 egg
1/2 tsp. baking powder
1/2 tsp. baking soda
3 c. flour

Cream butter and sugar, add egg; sifted dry ingredients and pecans. Shape in long rolls about 2 inches in diameter, place on platter, cover with a towel and leave in refrigerator overnight. Slice in thin slices and bake at 375 degrees for 5 minutes or until golden brown. Makes 6 dozen.

I loved these cookies. With the amount of sugar used, everyone found it to be not too sweet, and simply perfect. I rolled it into balls, then rolled the balls into small logs, and place them as such. They baked as bricks in the end. Though with my oven, I had to bake it for twelve minutes, as I wanted the tad over golden brown color. Even so, the cookie has that nice pecan flavoring, and for those who enjoy a softer cookie - this surely fits that mold. This cookie is almost archway's almond cookies. Just too yummy!
