SOUTHWEST CHICKEN WITH RICE
BOWLS
 
2 cups chopped rotisserie chicken
1 box Spanish rice
1 can pinto beans
1 can or frozen bag of corn
1 can stewed tomatoes
sprinkle Mrs. Dash seasoning
1/2 cup cheddar cheese (about 4 oz.)

Cut chicken into bite size pieces. Prepare rice according to directions on package. Rinse pinto beans. In large skillet add rice, chicken, pinto beans, corn and stewed tomatoes with broth. Simmer on low heat and add seasoning to taste. Serve in bowls and top with cheese and/or sour cream.
