BEEF MUSHROOM QUICHE 
1 unbaked 9 inch pie shell
1/2 lb. ground beef
1 can cream of mushroom soup, undiluted
1/2 c. milk
2 eggs, lightly beaten
2 tbsp. chopped chives
1/4 tsp. salt
Pinch white pepper
Dash of Tabasco sauce
1 can (4 oz.) mushroom pieces
3/4 c. (3 oz.) shredded Swiss cheese

Preheat oven to 450 degrees. Prick bottom and sides of pie shell with fork. Bake 12 to 15 minutes. Remove from oven. Reduce oven temperature to 350 degrees. In small skillet cook ground beef until browned, stirring frequently. Remove with slotted spoon and set aside. In medium bowl, mix mushroom soup, milk, eggs, spices and tabasco. Add ground beef, mushrooms and cheese. Pour into pie shell. Cover edges of pie shell with foil. Bake for 60 minutes or until knife inserted into center comes out clean. 6 servings, about 370 calories each serving.
