ZUCCHINI AND BRUSSELS SPROUTS
SALAD
 
SALAD:

2 c. Brussels sprouts, steamed tender
2 c. unpeeled zucchini, sliced
1/4 c. green onion, sliced

DRESSING:

1 c. oil
1/4 c. fresh lemon
1/2 c. vinegar
2 cloves crushed garlic
2 tsp. season salt
1 tsp. sugar
1/2 tsp. dry mustard
1/2 tsp. salt
1/4 tsp. red pepper flakes

Toss Brussels, zucchini and onions. Mix dressing and pour over vegetables. Chill 14-24 hours.

To serve, line salad bowl with greens. Add salad, garnish with tomatoes. At Christmas, add lots of cherry tomatoes to salad. Serves 8.
