MEAT, VEGETABLE, AND POTATO
CASSEROLE
 
1 lb. ground beef
1 (10 oz.) box frozen broccoli, thawed
1/4 c. mayonnaise
2 tbsp. bread crumbs
1 box instant scalloped potatoes
3/4 c. milk
3 c. boiling water

Brown ground beef and drain off fat. Put meat in bottom of a 9 x 13 inch pan. Put the broccoli over the meat, then put on the potatoes. Mix seasoning packet from the scalloped potatoes with the mayonnaise and milk. Pour over potato, broccoli, and meat layers. Pour boiling water over the top. Bake at 350 degrees for 1 hour. Sprinkle bread crumbs over mixture and bake 15 minutes longer.

I made a few variations that my wife LOVED:

* I used Rosemary and Herb Potatoes.
* Cooked about 1/8 cup of onions with the meat.
* I used a frozen vegetable mix that included broccoli, cauliflower, carrots, beans, and peppers.
* I used an 8x11 CorningWare dish.
* With about 10 minutes left, I sprinkled Parmesan and Mozzarella cheese on top.
