CHOCOLATE MINT BARS 
3 sq. unsweetened chocolate
1/2 c. plus 1 tbsp. butter
Hot water
2 eggs
1 c. sugar
1/2 tsp. all-purpose flour
1/4 tsp. salt
1 tsp. vanilla

PEPPERMINT FROSTING:

2 tbsp. butter
1 tbsp. whipping cream
1/2 tsp. peppermint extract
1 c. powdered sugar

Mint Bars: Melt 2 squares chocolate and 1/2 cup butter over hot water. In food processor mix eggs and sugar 30 seconds. Add chocolate butter mixture and mix 5 seconds. Add flour, salt and vanilla; mix well. Spoon into greased 9 inch square pan and spread evenly. Bake at 350 degrees for 20 minutes or until wooden pick comes out clean. Cool.

Frosting: Cut cold butter in chunks. Process until smooth, add whipping cream, extract and sugar. Mix until creamy. Spread over cooled bars. Melt 1 square chocolate with 1 tablespoon butter. Drizzle over frosting. Makes 2 dozen.
