LIME TURKEY & RICE SALAD 
3 tbsp. lime juice
2 tbsp. vegetable oil
1 tbsp. fresh chopped cilantro
1/2 tsp. cumin
1/2 tsp. salt
3/4 lb. grilled turkey breast, cut into 2" strips (about 2 c.)
3 c. cooked rice, cooled
1 med. size red pepper, cut into strips
1 c. jicama strips
1/2 c. sliced green onions

Combine lime juice, oil, cilantro, cumin and salt in large bowl. Add turkey, rice, red pepper, jicama and green onions; toss. Serve chilled. Makes 6 servings.

Substitute 1 cup sliced water chestnuts for jicama.
