SALMON QUICHE 
1 pkg. (11 oz.) pie crust mix or sticks
1 can salmon, drained and flaked
4 green onions, chopped
8 eggs
4 c. whipping cream, or light 20%
1 1/2 tsp. salt
1/2 tsp. sugar
1/4 tsp. cayenne red pepper

Prepare pastry for two 1-crust pies as directed on package. Divide salmon and onions between pastry-lined pie plates. Heat oven to 425 degrees. Pour half of egg mixture on salmon and onions in each pie plate. Bake 15 minutes, reduce heat to 300 degrees. Bake until knife inserted 1 inch from edge comes out clean, approximately 45 minutes. Let stand 10 minutes before cutting. Serves 12.
