DINNER ROLLS 
2 pkgs. yeast
3/4 c. warm water
1 tsp. sugar
3/4 c. milk, scalded
1/2 c. sugar
1 tsp. salt
1/2 c. butter
2 eggs, beaten (extra large)
5 1/2 c. flour, more or less

Dissolve yeast and sugar in 3/4 cup warm water. Set aside to bubble. Scald milk. Pour it over sugar, salt and butter. Cool. Stir in eggs, yeast mixture, and 3 cups flour. Beat until smooth. Stir in additional flour to make a dough is soft, but not sticky. Place in a ball in buttered bowl.

Spread top of dough with soft butter. Cover, let rise until doubled, about 1-2-3 hours? Punch down, divide dough in 2 sections, roll out to 1/4 inch thickness, cut into strips about 1/2 x 5 inches. Roll strips between fingers, tie in knots, place on greased cookie sheets, let rise about 1 hour.

Bake at 325 degrees for 15-20 minutes until golden brown. Take off cookie sheets, let cool on racks. Makes 4 or so dozen.
