DORIS' LEMON BUTTER 
3 eggs
3 lemons, juice
Grated rind of 2 lemons
1 1/2 c. sugar
3 tbsp. cornstarch
2 c. boiling water
2 tbsp. butter

Beat eggs, add lemon juice and rind. Add sugar. Make thickening with cornstarch and a little water, add to first mixture. Add boiling water. Bring to boil, remove from burner when thick. Add butter. Makes 1 quart.

Can be cooked in the microwave, stir occasionally, until thick. Remove and cover to prevent a skin forming on the top.

Since microwave ovens vary in power, you may need to adjust your cooking time.
