VEAL CUTLET PARMIGIANA 
4 veal cutlets
Flour
1 egg, beaten
3/4 c. fine bread crumbs
3 tbsp. olive oil
4 lg. thin slices mozzarella or Swiss cheese
5 tbsp. grated Parmesan cheese
Salt and pepper

Dip cutlets in flour, then in egg, then in bread crumbs. Place olive oil in warm frying pan and saute meat until brown. Pour layer of marinara sauce (recipe follows) on bottom of pan, lay cutlets on top. Put a thin layer of sauce over this and then thin slices of cheese. Add a fine layer of marinara. Sprinkle top with Parmesan cheese. Salt and pepper to taste. Bake in 400 degree oven until cheese is melted. Serve hot.

MARINARA SAUCE:

1 tbsp. oil
1 clove garlic
1 c. tomato sauce
Salt and pepper

Brown garlic in oil and add tomato sauce, salt and pepper. Simmer for 10 minutes.
