GRANDMA'S AUTUMN WAFFLES | |
2 tbsp. butter 1/4 c. packed brown sugar 2 whole baking apples, cored and sliced 1/4 c. raisins 1/4 c. chopped pecans 2 c. all purpose flour 2 tsp. sugar 2 tsp. baking powder 1/4 tsp. salt 3 whole eggs 5 tbsp. butter, melted and cool 3/4 c. milk 3/4 c. light cream Maple syrup In skillet, melt butter and brown sugar. Add apples, raisins and pecans. Cook until apples are tender, about 3 to 4 minutes; keep warm. Sift together flour, sugar, baking powder and salt, set aside. In a separate bowl, beat eggs, add butter, milk and cream. Stir in dry ingredients, mixing only until moistened. Lumps will remain. Bake in preheated waffle iron according to manufacturers' directions until golden brown. Serve with a spoonful of apple topping and heated maple syrup. Makes 5 servings. |
