SHRIMP WITH RICE 
3 lb. fresh shrimp, cooked and drained
1 bunch green onions, chopped
3 tbsp. butter
2 cans cream of mushroom soup
1 tbsp. lemon juice
1 clove crushed garlic
Salt and pepper to taste
1 can mushrooms, drained
2 c. cooked rice (1 cup raw, cook as directed)
1 c. sour cream
2 c. shredded sharp cheddar cheese

Cook and clean shrimp, saute onion in butter until tender, add soup, lemon juice, and season to taste, add onion. Fold in rice, shrimp, mushroom, to sauce and add sour cream. Pour into buttered dish (can do this a day before). Put cheese on top and bake at 325 degree oven for 30 minutes or until bubbly. Serves 8 generously. (May have to add milk).
