CHILLED CUCUMBER SOUP 
2 tbsp. butter
6 green onions, chopped
1 sm. onion, chopped
3 med. cucumbers, peeled, halved lengthwise, seeded & chopped
2 med. potatoes, peeled & diced
2 c. chicken broth
1/2 c. heavy cream, optional
1 tsp. salt
1/4 tsp. pepper
Chopped radishes & minced parsley, optional

In heavy saucepan, melt butter and saute onions for 5 minutes, stirring constantly. Add cucumbers, potatoes and broth; bring to boil, cover, then simmer 15-20 minutes or until potatoes are tender. Cool. Whirl half at a time in blender until smooth. Chill covered several hours. stir in cream, salt and pepper. Top with radishes and parsley. Serves 4.
