JAMAICAN BANANA CAKE 
2/3 c. shortening
1 1/4 c. sugar
1 tsp. vanilla
2 eggs
1 c. milk
1 c. mashed bananas
2 1/4 c. flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1/2 c. chopped walnuts

Preheat oven to 350 degrees. Grease and flour pan. In large mixing bowl cream shortening, sugar, vanilla and eggs until fluffy. Add milk, bananas, flour, baking powder, baking soda and salt. Mix until blended, stir in walnuts, pour into pan. Bake at 350 degrees for 40 to 45 minutes.

TOPPING:

1/3 c. butter
2/3 c. brown sugar
2 tbsp. milk
1 c. flaked coconut

For topping set oven to broil. In small saucepan combine butter, brown sugar and milk. Cook over medium heat, stir in coconut. Spread over warm cake. Broil 4 inches from heat until golden brown.
