JAMBALAYA 
2 sticks butter, melt in bottom of roaster
2 c. raw rice (not instant)
1 lb. or more raw shrimp
1 lb. or more smoked sausage
1/2 c. chopped shallots (green onions) or 1 med. onion, diced
1 (8 oz.) can tomato sauce
1 (8 oz.) can mushrooms or chopped fresh mushrooms
1 can beef consomme, undiluted
1 can French onion soup, undiluted
1/2 c. chopped celery
1 tsp. thyme
2 tbsp. parsley
Salt, pepper, cayenne pepper to suit your taste

Mix all ingredients together in roaster. Cover. Bake at 350 degrees for 1 1/4 hours. Serves 6 to 8.
