PARMESAN YOGURT CHICKEN | |
1 (2 lb.) chicken, cut up 2 tbsp. lemon juice Salt and pepper 1/2 c. low fat yogurt 1/4 c. reduced fat mayonnaise 1 tbsp. Dijon mustard 1 tbsp. Worcestershire sauce 1/2 tsp. dried thyme 1/4 tsp. cayenne pepper 1/4 c. sliced green onions 1/4 c. grated Parmesan cheese Remove chicken skin and place in a single layer in a large glass baking dish. Drizzle with lemon juice and sprinkle with salt and pepper. Blend remaining ingredients except Parmesan cheese and spread over chicken. Bake uncovered at 350 degrees for 50 minutes. Remove from oven and drain off juices. Sprinkle with cheese and broil about 4 inches from heat until cheese melts and browns slightly, about 3 minutes. |
