BAKED SCALLOPS | |
1 tbsp. vegetable oil 2 tbsp. butter, melted 2 tbsp. lemon juice 1/4 c. bread crumbs 3 tbsp. grated Parmesan cheese 1 tsp. chopped parsley 1/2 tsp. salt 1/4 tsp. pepper 1 lb. fresh scallops Wash scallops. Remove any shell particles and drain. Combine all ingredients except the scallops in a small bowl. Add the scallops and toss until well coated. Place breaded scallops in a baking dish. Bake uncovered at 350 degrees for 20 minutes. Serves 4. |
