BASIC MUFFINS 
2 c. unsifted flour
1/4 c. sugar
3 tsp. baking powder
1/2 tsp. salt
1/4 c. butter
1 egg, beaten
1 c. milk

Sift together flour, sugar, baking powder and salt. Cut in butter until pieces are the size of small peas. Beat egg and milk together; add all at once to flour mixture. Stir quickly with fork just until dry ingredients are moistened. (Batter will be lumpy.) Fill each muffin cup 2/3 full. Bake at 400 degrees for 25 minutes or until done. Makes 12.
