MOCHA NUT BREAD 
2 c. sifted flour
1/2 tsp. baking soda
1/2 tsp. salt
2 tsp. baking powder
1 c. light brown sugar
2 eggs, well beaten
1 grated small apple
2 tbsp. instant coffee
1/2 c. chopped nuts
1/2 c. shortening (Crisco or Spry)
1 tbsp. milk
6 cherries, cut up

Sift dry ingredients. Cream sugar and shortening. Add eggs until light and fluffy. Mix milk and instant coffee and coffee. Add apples and sifted dried ingredients and nuts. Mix well and spread evenly in greased 8 1/2 x 4 1/2 x 2 1/2 inch loaf pan.

Let stand 20 minutes before baking. Bake at 350 degrees for 50 to 60 minutes or until loaf springs back when touched on top. Remove from pan when almost cool and place on cooling rack. Very different, but delicious tasting.
