SAUTEED ZUCCHINI TOSS 
2 tbsp. oil
3 lg. zucchini (2 lb.), cut in 1/2" thick slices
6 lg. celery ribs, sliced 1/2" thick
1 lg. green pepper, cut in strips or 1 c. red & green frozen peppers
1 lg. onion, sliced (1 c.)
2 tbsp. minced parsley
1 tsp. each salt, pepper & paprika

Saute vegetables in HOT oil in large skillet, turning and stirring for 15 minutes or until tender. Stir in salt, pepper and paprika. Makes 6 servings.
