DENISE'S CARROT CAKE 
1 1/2 c. vegetable oil
2 c. sugar
3 sm. jars strained carrots
4 egg yolks
4 egg whites
2 1/2 c. flour
2 1/2 tsp. cinnamon
1 1/2 tsp. baking soda
1 1/2 c. chopped walnuts
Grate 3 carrots

Beat oil and sugar - add egg yolks and carrots. Mix dry ingredients. Combine. Then beat egg whites until stiff. Fold in and add nuts. Bake at 350 degrees for 45 minutes in oiled and floured pan.

ICING:

8 oz. cream cheese
1 stick butter
1 box confectioners' sugar
1 tsp. vanilla
Enough milk to achieve spreading consistency
