CARROT - PINEAPPLE CAKE | |
2 c. sugar (brown or white) 3 c. flour 2 tsp. cinnamon 2 tsp. baking powder 1 tsp. baking soda 1 c. oil 3 slightly beaten eggs 2 c. grated carrots 1 c. crushed pineapple 1 c. nuts Sift and mix together the dry ingredients; make a well in the middle and pour in the oil, eggs, pineapple, and carrots. Mix by hand only until well blended. Add floured nuts. Bake in a greased and floured tube cake pan for 45 to 50 minutes at 350 degrees F. or until done when tested. TOPPING: 2 c. powdered sugar or 1 lb. 1/4 c. butter 8 oz. cream cheese 1/2 c. crushed pineapple 1/2 c. nuts |
