HONEY CARROT CAKE 
1 lg. whole egg
3/4 c. honey
1 tsp. vanilla
1 1/4 tsp. cinnamon
1/2 tsp. baking soda
1/4 tsp. salt
1/3 c. raisins, chopped
2 egg whites
1/2 c. Promise spread
1 1/2 c. all purpose flour
1 tsp. baking powder
1/2 tsp. ground allspice
1 1/2 c. finely shredded carrots

In mixing bowl beat egg and egg whites until light and frothy; beat in honey, Promise and vanilla.

Sift together flour, cinnamon, baking powder, baking soda, allspice, salt. Stir dry ingredients into egg mixture. Fold in carrots and raisins. Turn mixture into a greased 8 inch square baking pan. Bake in 325 degree oven for 40-50 minutes or until tested done.
