CAULIFLOWER DELIGHT 
Preparation time: 5 minutes. Cooking time: 15 to 20 minutes.

As simple as can be, this dish becomes very flavorful with the pepper-bacon topping added. Cook the cauliflower to crisp tenderness and you'll have a perfect meal in minutes.

For 4 servings you will need:

1 lg. head cauliflower, about 2 lbs.
Water
Salt
4 to 6 bacon strips
3 tbsp. parsley, chopped

TIPS: Always choose cauliflower with white, compact flower clusters. Before cooking you might wish to soak cauliflower head in salted cold water for a few minutes to remove all impurities.

PREPARATION: Wash and trim cauliflower and remove most of the outer leaves. Put whole head in a pot filled with 2 to 3 inches of boiling salted water. Cover. Steam cauliflower about 15 minutes or until tender crisp, not overcooked. Meanwhile, cut the bacon and green pepper into strips. Saute bacon until soft or crisp to your liking. Drain and keep warm. Saute pepper in same pan with bacon drippings. Place cooked cauliflower on a serving dish. Top with bacon-pepper mixture. Sprinkle with parsley.

Good served with: As is, or with pork chops, flank steak, broiled fish or chicken.

For 2 servings: Half of the ingredients. Use 1 small head cauliflower. For 8 servings: Double the ingredients.
