CAULIFLOWER-CHEESE PIE 
2 c. grated raw potato
1/2 tsp. salt
1 egg beaten
1/4 c. grated onion

Crust - Oven at 400 degrees. Salt potatoes and put in colander over bowl for 10 minutes, squeeze out water and add to remaining ingredients. Pat it into a well oiled 9 inch pie pan, building up the sides. Bake for 40 minutes until browned. May brush with oil after first 30 minutes.

FILLING:

1 packed c. of grated Cheddar cheese
1 med. cauliflower, broken in sm. flowerets
1 med. clove crushed garlic
1 c. chopped onion
Dash of thyme
1/2 tsp. salt
2 eggs, beaten with 1/4 c. milk
3 tbsp. butter
1/2 tsp. basil
1/2 tsp. pepper

Turn oven to 375 degrees. Saute onions and garlic in butter 5 minutes. Add herbs and cauliflower and cook covered 10 minutes. Spread 1/2 cheese, then the saute and rest of cheese onto baked crust. Pour custard over and dust with paprika. Bake 35-40 more minutes.
