STRAWBERRY AND CREAM CHEESE PIE 
CRUST:

1/2 c. butter
3/4 c. self rising flour
1/2 c. potato flakes
1/3 c. firmly packed brown sugar

FILLING:

1 2/3 c. or half of 13 oz. pkg. lemon or vanilla frosting mix (powdered)
1 (8 oz.) pkgs. cream cheese, softened
1 c. or 10 oz. pkg. frozen strawberries (drain & reserve 1/2 c. syrup)
1 c. whipping cream

Melt butter in 9" pie pan (in the oven). Remove from oven and add flour, potato flakes and brown sugar; mix well. Bake at 400 degrees for 10 to 12 minutes until golden brown. Stir after 5 minutes. Reserve 2 tablespoons of baked crumbs for garnish. Lightly press remaining crumbs into bottom and sides of pie pan. Cool while preparing filling.

Measure 1 2/3 cup frosting mix in large bowl. Combine with cream cheese and reserved syrup. Blend until combined. Beat 2 minutes at medium speed until smooth. By hand, fold in strawberries and whipped cream. Pour in pie crust, after it's cooled. Put on garnish crumbs and whole strawberries. Put in freezer until frozen, 4 hours. Remove pie from freezer 15 minutes before serving. Serves 8 to 10.
