CHEESE LUNCHEON PIE 
1 unbaked pie crust
2 eggs
2 c. (1 lb.) cream style cottage cheese
2 c. hot mashed potatoes
3/4 c. thick sour cream
1/4 c. finely chopped onion
2 tbsp. chopped pimiento
1 tsp. salt
1/8 tsp. white pepper

Beat ingredients until thick and piled softly. Turn mixture into pie shell, spreading evenly. Dot with 2 tablespoons butter. Bake at 350 degrees for 1 1/2 hours and lightly browned.
