CHICKEN "POPS" OR NUGGETS 
1 pkg. boneless chicken breasts, cut in nugget pieces
1 c. pancake mix
1 tsp. salt
1/8 tsp. pepper
1 egg, beaten
1 tbsp. oil
1/2 c. plus 2 tbsp. water

Combine pancake mix, salt, pepper, egg, oil and water in mixing bowl. Beat with wire whisk until smooth. Chill 15 minutes. Heat 2 inches of vegetable oil in skillet. Dip chicken in batter and drop into oil. Cook until golden brown. Remove with slotted spoon and drain on paper towels. Serve with sweet and sour sauce or honey.
